First full week back to work = a fresh week to start a great series with a yummy little ingredient I’ve been seeing a LOT of lately – Quinoa – reminds me a little bit of Cous Cous, but much heartier and packed with protein. I’ve come to learn too that it’s a great base for a lot of fantastic recipes too – Quinoa bites in particular. A while back, I tried these delicious Buffalo Chicken Quinoa Bites from Miki’s Kitchen and they were a perfect, healthy snack for anyone out there that is as Buffalo Chicken crazy as I am. Bites are perfect really – they’re small – they’re cute – you can eat them with your fingers, and it’s generally assumed that you can have one or two extra, cuz’ hey! They’re bite sized!
Why else am I pushing Quinoa? Well, due to it’s protein punch package, it’s considered a power food which I’ll be needing a lot of lately as I begin (or, more like “focus” on) my Half Marathon training schedule. There I said it out loud. Some of my besties from home and I are headed down to Disney in just a few short weeks to do the Princess Half Marathon – and while I can’t WAIT to get down there, catch some rays, eat some Dole Whip, and hopefully get a glimpse of Mickey & Minnie, there’s that whole 13.1 miles to get through first, and I’ve got a ways to go training wise. So come on Quinoa, help a sistah out will ya?
Ok first up, Quinoa Bites for breakfast, the most important meal of the day! And this combination of quinoa, apples and a sweet sprinkling of cinnamon and sugar will start your day off just right 🙂
Ingredients
- 1 cup cooked quinoa
- 1 cup quick oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 tablespoons brown sugar
- 1 tablespoon granulated sugar
- 1 tablespoon maple syrup
- 1 cup chopped apples (I used macintosh, but any type should work nicely)
- 2 eggs, lightly beaten
Instructions
1) Preheat oven to 350 degrees.
2) In a large mixing bowl, add your cooked quinoa and quick oats. In a separate smaller mixing bowl, combine your cinnamon, nutmeg and sugars and then add the spice mixture to the quinoa and oats. Then add the maple syrup, apples and eggs and mix until just combined.
3) Spray your mini muffin pan (24 count) with non-stick cooking spray. Make sure to spray the top of the pan as well. The quinoa bites will overflow out of the cup a little bit, so you don't want the tops to stick.
4) Fill each muffin slot with 1 tablespoon of the mixture and bake for about 15-20 minutes. Serve warm!

Carbohydrates - 6.25 grams
Weight Watchers Points - 1 point per bite

Sure thing! I made a dinner style quinoa muffin/bite in regular sized muffin tins and they came out great. I would just recommend ookng them for 30-35 minutes in the larger sized tins.
they look amazing! how many calories are there and is there any fat?
Sorry it took me a bit to get back to this Valerie but if I’ve done my math correctly, each bite is about 40 calories and less than a gram of fat each! (About 3/4 of a gram of fat) Not bad for such a yummy treat!
These look delicious-can’t wait to try them! Have you tried freezing them? I think they would be great to grab on the way out the door in the morning on those days when we’re running late.
I haven’t tried freezing them Korine but since they’re very similar in Texture to a muffin, I beT they would freeze just fine for those ‘chaotic mornings’ which I have way too often myself!
Just the other day I was looking on pinterest and saw this great idea of apple cinnamon quinoa so I clicked on the link and it brought me to this wonderful blog. I was scoping it out when I saw a picture of the beautiful couple and was like “Hey, they look familiar”!?! I read the about us section and was couldn’t believe that they couple on this great blog was the Dave and Kate that my husband Brian and I know!!!! I read that you are doing the Princess Half Marathon in Disney…congrats! I ran that race twice. It is a lot of fun but I have a few tips for you (if you would like). Jess! What a small world eh? Well firstly, I’m glad you liked the Apple Cinnamon Quinoa Bites – let me know how they come out if you end up making them! As far as the Princess 1/2, I can’t wait! The same group of friends and I did it in 2011 too, but I am always open to new tips and advice! The training has been going pretty good, despite the chilly temps 🙂 I hope you and Brian are doing well and having a great 2013 so far – we’ll most certainly have to talk ‘NZ’ shop soon! Can’t believe it’s almost been a year – yikes!
How do you store these bad boys? And how long is their shelf life?
Excellent question Rebecca! You can store hem in an air tight container for up to a week or you can also freeze them in an air tight container for up to a month. They may last longer than that in the freezer but I personally don’t like to let baked goods stay in te freezer for longer than a month – just a personal preference!

Hi meg! Great question (I should actually address that!) but no the quick oats you can add as they are- no need to cook them. They’re really just to help add some consistency to the bites. And I used a Cortland apple but I’m sure any other type would work too – the only one I can think might not jive well is a Granny Smith, due to its sourness.
Have you tried making these with agave nectar or any artificial sweeteners?
I haven’t yet in this recipe Laura, but I have substituted agave for syrup in other recipes and it’s the same great taste, and better for you! Same with artificial sweeteners – I would recommend swapping out the granulated sugar with the Splenda Sugar Blend or Truvia and I know Splenda also has a brown sugar blend that you could probably swap out for the brown sugar in this recipe to save some calories!
I’ve tried these and used sucanat in place of the brown sugar and evaporated cane juice for the white sugar – they came out great. I also used regular rolled oats instead of quick and they are a bit denser but still great in my kid’s opinion.

Can you over cook quinoa?? Mine didnt taste that great people keep tellin me the quinoa tastes like whatever you cook it with so i figured itd taste like apples and cinnamon but my bites tasted weird.what did i do wrong? 🙁
I’m sorry about that Caroline! I’m not sure how you cooked your Quinoa? But I usually cook it in just water and about 15 minutes is plenty of time for it to cook. It’s true, the Quinoa is great in that it kind of takes on whatever flavors its being mixed with. But always feel free to tweak your ingredients! These bites weren’t supposed to be super sweet but you could always add more syrup or brown/white sugar if you found they weren’t quite sweet enough for your liking. I hope that helps!
Rinsing and or ‘proofing’ the quinoa may help. I rinse my quinoa and depending on the brand you will find the water to become cloudy. Quinoa should be rinsed until the water runs clear. I think ‘proofing’ is a matter of preference, but I find it helps to create a fluffier quinoa for salads and such.

I made these tonight and added a little golden raisin and used flax eggs instead of real eggs to make it vegan. They turned out great! This is an awesome way to use my leftover Quinoa. Thanks for the great idea!

Hi Danielle! They’re a perfect snack for the little guys – nice and healthy! The oats in this recipe act as flour would, so you could probably swap out the oats with gluten-free flour (still using a cup of flour). I hope that helps!!!

Just tried to make these but they didn’t turn out muffin-like at all 🙁 Just a big ol’ jumbled mess. Still tasty though.
Mine didn’t work either. Didn’t hold together after baking, so what came out was just a little drier (as a result of being baked) than what went in, and fell apart on de-tinning. Tasted okay, just not as convenient as “bites.” I used regular rolled oats (not quick), so that might have had something to do with it (although Kate said it should work below).
That’s such a bummer Julie! The oats really shouldn’t make a difference – I bet maybe an extra egg white might have helped hold them together – kind of like a glue. I’m sorry they didn’t turn out for you!
I have tried the recipe twice now and both times they have stuck to the pans even when I sprayed them well. Great flavor but a jumbled mess and they haven’t stayed crips like out of the oven. Just fallen apart jumbled mess. Suggestions? I love the idea and flavor just need to get them to stay in one piece and come out of the pan.
Hi! I’m interested in trying this recipe, but am a little unclear on one of the ingredients. For the quinoa, is it supposed to be 1 cup of dry quinoa that is then cooked, or do you cook some quinoa and then take 1 cup of that? Because I think 1 cup of uncooked quinoa contains a heckuva lot more quinoa than 1 cup of cooked quinoa, if I’m not mistaken!

Sorry for the confusion Ashleigh! It’s is one cup of quinoa that has been cooked. You’re right that would be a lot of quinoa!

Yes Linda, I believe a 1/2 cup dry quinoa will yield a cup of it cooked.
I just made these this morning and they were a huge hit! I had a little of the mixture left over and so I put them in larger muffin tins but they didn’t set up as well, so I just put it in a baggy and we’re taking it to the zoo w us today as a snack, like granola!

Great question! I think they would do fine in the paper liners, the only thing I would recommend is to maybe spray the liners with non-stick cooking spray, just to be on the safe side! Hope you like them 🙂

just took these out of the oven, a bit bummed because I didn’t realise it but my quinoa wasn’t cooked properly so they are a bit crunchy, but otherwise yummy, I have 2 little boys with severe food allergies including anaphylaxis to egg so I substituted orgran no egg and it seems to have worked well, thanks for the yummy recipe 😀

You could definitely try it Emily, although the oats kind of serve as a glue of sorts to hold them together so I’m just not sure how they would stay together without them. But it can’t hurt to try!!

Great question! I would maybe try to use an egg-substitute like Egg Beaters. Hopefully that will do the trick!
I tried this recipe and they did not turn out well. They just stayed in little lumps and didn’t rise at all. Any suggestions? Do you need to mix in the quinoa while it is still warm? I let it cool first.
They’re not supposed to be like the texture muffins and rise a lot – they are meant to be a little bit more dense and not really fluffy like a muffin would be. And it’s good to let it cool to room temperature because otherwise if the quinoa is too hot, the eggs will start to cook.

I think they would be just fine Yolanda – I would just use the same measurements, swapping the stevia out for the granulated sugar, and then splenda actually has a brown sugar substitute that should work for substituting the brown sugar measurement.
Has anyone tried making these with raspberries or some other fruit. I don’t have apples right now, but I have raspberries, blackberries and blueberries. Just wondering if they might turn out, may have to just experiment.

I have never had quinoa before, so I wasn’t sure what to expect. Also, I used canned apples instead of fresh, and (accidentally) turned them into applesauce. Mine did not rise at all. They were good….but I think next time I’ll spread the mixture out on a cookie sheet and bake it, and make it like a granola instead. I liked the crunchy bits that stuck to the muffin pan.

Hi Tammy! I would maybe try Agave instead of maple syrup. That will be a nice substitute that will add the same amount of sweetness. You could also try corn syrup as well.
I used raw honey in mine. put it in the microwave to soften it first.
Mine are in the oven now I made a few modifications…I baked the apples then blended them in the vitamix with the eggs and spices and added 2 tbsp of Teddy’s natural peanut butter. I sweetened them with raw honey instead of maple syrup and did not use any brown sugar or white sugar. I also used a vanilla bean in the mixture and I boiled my quinoa in almond milk. I chopped up some pecans an added those as well. I also baked them in muffin liners and did not spray them I’ll let you know how it worked. Thanks for the recipe!

How could I add some overripe bananas into this recipe?
Actually Laura, I have a recipe for Peanut Butter Banana Quinoa Bites (https://www.andtheycookedhappilyeverafter.com/2013/03/13/peanut-butter-banana-quinoa-bites-with-chocolate-chips/) and they are delish! I would say though if you just added one banana to the Apple Cinnamon Quinoa bite recipe, maybe just use 1 egg vs. the 2 so they won’t be too mushy. Let me know if you try them and how they turn out!
We were so excited for this and it was a huge flop for us………. so the extra we are using blueberries with and just baking it in wrappers! Lets hope it works
I was excited to make these today, but was disappointed as they crumbled to pieces when I tried to take them out of the muffin tins! They came out easily as I did spray the plans, but they don’t stick together! I even tried cooking them a little longer, but no success!
Oh I’m sorry to hear that Jen! So hard to figure out what works and what doesnt’ sometimes. Maybe next time try baking them for a little less time (ovens can vary so greatly with their baking power) or adding an egg white to the recipe. That might help with the moistness factor. I hope they at least still tasted ok!
They came out yummy, very nice flavor…I eat them with a fork right out of the liners but would definitely spray the muffin liners first if you want to remove them. forgot to mention in my last post that I added a teaspoon of baking soda as well.

Hi i am just wondering why mine didn’t turn out so well? I followed the directions but the oil that is recommended to spray on the pan spattered all over the oven, (i didn’t use too much either), my house had burnt smell all night and the bottoms and tops of all the bites were burnt. What could have gone wrong? The temperature was the right amount too. I doubled the recipe because I didn’t know that one cup of cooked quinoa was actually only 1/2 cup dry quinoa… let me know what you thi k!
That is such a bummer Stephanie! I’m not 100% sure what might have gone wrong – I know sometimes different ovens can cook hotter than others. Maybe next time just cut the time down a bit – don’t give up on them, they are delicious!
Also I did use the muffin wrappers and sprayed those. Maybe thats why?

I just made these. I put 2T into a regular muffin dish. I didn’t even cook them for 25 minutes and they turned out dry. Maybe the regular oats did that? Not sure, but I won’t be making these again.
To add onto my first comment, I only cooked for about 20 minutes. I just put some melted ghee on top, that improved the flavor and texture tremendously!!!

Smart! Sorry they were dry 🙁 I would say maybe try cutting the bake time down by a few minutes, or maybe add 1 more egg white to the mix. That can add some moisture.
I made these last night and they were just OK. They were dry. Do you think adding apple sauce or yogurt to the mixture would help?
It may Jackie – you could also try cutting back the bake time by a couple minutes. Overbaking can definitely dry them out as well.

I just took these out if the oven and they’re delicious. They were really easy to put together too. I used amber agave syrup because I didn’t have maple and I skipped the nutmeg. Can I use cookie sheet in the absence of muffin tins?
Sure thing – you could just use tablespoons on the cookie sheet vs. the muffin cups. Just make sure you spay w/ non-stick!
I’ve made these several times, and they are great. I freeze them in packs of 5 and then warm them up in the microwave for about 30 seconds. It’s a great filling breakfast on these chillier fall mornings.

These are absolutely delicious! I used ginger golden apples and almost kind of diced them and they have these amazing little pops of flavor when you bite into them. I made my quinoa in a rice cooker and also used a regular baking sheet and gloved them on like you would cookies (I didn’t have mini muffin pans) but they came out perfect! My whole family loves them and I will be making them more often.

I love the taste of them I just can’t seem to get them to come out in one piece and stay together and crisp. First time I cooked them 15 minutes the 2nd time 20 minutes. Also the 2nd day they were kind of spongy. Suggestions? What is the trick to getting them out of the pan. (I used no stick pans AND sprayed them.
Hi Malinda – that is so strange! Usually cooking spray will do the trick! If that doesn’t seem to work, maybe try a little bit of butter instead. As far as getting them to stay together, I would maybe try adding another egg white or even a whole egg. That seems to help serve as a glue to hold baked goods together in my experience. I may have to try that. Thanks. In the mean time I did try the Raisin Bites and instead of using muffin tin I just used non-stick foil on a cookie sheet and used my Tablespoon measuring spoon and scooped them right on the baking sheet. Slide right off and were a total hit. Actually made them 3 times already. Was going to try the same thing with the apple bites. Do you have to refrigerate them if eating within a few days?

Glad you enjoyed them Laura! They’re ok at room temperature for 3-5 days. If not though, I’d toss them in the freezer to store for a longer period of time.

Just made these and they are sooo good!!!! I used thick cut oats and added a dash of vanilla, salt, and about 1/4 c shredded unsweetened coconut. These are definetly a keeper :))
These were really yummy! Very moist and spongy. Next time I make these I think I will try cranberries and chocolate chips though because I’m not a big fan of the apple 🙂

The first batch I made of these were pretty gross (texture-wise not flavour-wise). They were crunchy on the top and soggy on the bottom, fell apart like stuffing. I decided to just cook my second batch spread out of a cookie sheet to just make more granola style and it turned out much better.
Maybe if you had a good convection oven they would be more evenly cooked?
These were delicious! My daughter and I made them today. I actually cannot have egg so we used applesauce instead and I did not add the syrup. However, they were still the perfect little treat! I love these. Can’t wait to make more quinoa muffins!
