Not that there were any gourmet dishes coming out of our kitchen when I was home with Murph, but there was a smidge more time to have dinner on the table. So now I gotta think quick – think fast – think ONE-POT DISHES SAVE ME PLEASE.
This Garlicky Shrimp Pasta is stupid easy guys. It’s made all in one pot and it’s on your table in less than thirty minutes.
And ya know, if a few salty tears slip in there, it just adds flavor.
One-Pot Garlicky Shrimp Pasta

A hearty dinner for those busy weeknights made in 30 miuntes with only 7 ingredients and ONE POT.
Ingredients
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 large garlic cloves, minced
- 3 cups chicken stock
- 8oz whole wheat fettucini or spaghetti
- 8 large basil leaves, chopped julienne style (plus more for garnish)
- 1lb uncooked shrimp, peeled and de-veined
- *Parmesan cheese for sprinklage
Instructions
- Heat olive oil and butter in a large saucepan over medium heat until butter is full melted.
- Add garlic and stir for 1 minute until fragrant (be careful not to burn).
- Add your 3 cups of chicken stock, pasta and basil leaves. Bring mixture to a boil.
- Reduce heat and simmer pasta, uncovered, for about 15-20 minutes until fully cooked through, stirring frequently.
- With about 5 minutes left for the pasta to cook, add the shrimp to the pasta mixture. You'll know they're ready when they turn pink.
- Serve hot with fresh basil and parmesan cheese.
