This Stars and Stripes Berry Galette is the easiest 4th of July dessert you can find! Fresh blueberries and strawberries wrapped into pie crust, and spotted with pie crust stars!
It’s almost America’s BIRTHDAY! Isn’t she lookin’ fly for 242 years old? I wonder what her secret is. I bet it’s herbs – or yoga – OR maybe it’s this Stars and Stripes Berry Galette? Having fruit and dessert every day keeps the doctor away (for over 2 centuries). That means you’ve gotta go out and make this Stars and Stripes Berry Galette!
Fourth of July is a gigantic summer holiday in New England, as it is everywhere in America, because it’s like every state’s birthday kind of – let’s all sing the alphabet state song to celebrate – Allllabaaaama, Alaska, Arizona….um Arkansas…B…B states…ok well, third grade was a long time ago. How about Happy Birthday instead?
Being though that it is summer and the peak of fresh everyyyything is like now, hosting a fourth of July suaree is hard! So so soooo many good things to offer your guests – the grilled meats, the veggies, the pasta and potato salads….we haven’t even talked about dessert yet. While I’m a chocolate-based dessert gal at heart, this is the one time of year where the berry selection is off the chain – and fresh off the bush. And you can’t incorporate our nation’s colors into a patriotic themed dessert with chocolate – you just can’t. It’s like god intended blueberries and strawberries to be blue and red, and oh yeah vanilla ice cream is white – and like, pie crust kind of is too! There’s a reason they call him God.
Anyway though, this dessert is soooo cute and soooo easy to make, especially if you holler at the store-bought pie crust. Or, of course you can make your own and I will bow down to you and fan you with my empty store-bought pie crust box (in all seriousness, Ina’s pie crust recipe is my all time fave which I use when I have time to make pie crust, which is never). And do not fear if you don’t have a star shaped cookie cutter! Hop on Google images and enter “star shape” in the search box and voila! An entire galaxy of stars at your disposal – god bless the internet. Print one out – cut it – trace the pie crust with it – done and done. Who needs a rusty ole’ cookie cutter anyway. Make a couple of these, top ’em with vanilla ice cream, and sing Happy Birthday America at the tippity top of your lungs!
- 1 box of Pillsbury pie crust (2 crusts per box)
- 1 cup strawberries, hulled and cut into eighths
- 1 cup blueberries
- 2 tablespoons white sugar divided, plus a bit more for sprinkling
- 1 tablespoon flour, divided
- 2 tablespoons lemon juice, divided
- 1 egg (for egg wash)
- Preheat your oven to 350 degrees F.
- Prepare your berries in two separate mixing bowls - one with strawberries, 1 tablespoon sugar, 1/2 tablespoon flour and 1 tablespoon lemon juice and the other with blueberries, 1 tablespoon sugar, 1/2 tablespoon flour and 1 tablespoon lemon juice. Mix to combine.
- Place one pie crust on a baking sheet lined with parchment paper. Beat your egg lightly, and brush around the edge of the pie crust, leaving a 1.5 - 2" border. Then, arrange your berries in a 'stripe pattern' in the center of the pie crust (you should be able to get 2 stripes of each type of berry). Fold the edges of the pie crust over the berries.
- With the other pie crust, cut out 2-3 stars (depending on the size of your star - if smaller, you can fit more, if larger you may 2-3 should do it) and gently place them on top of the berries. Brush the stars and the edge of the galette with the egg wash. Sprinkle the edge of the galette with sugar.
- Bake galette in your preheated oven for 35 - 40 minutes until the crust starts to brown and the juices in your berries start to bubble. If you feel like your crust is browning and your berries aren't quite done yet, just throw a piece of foil around the edge of the galette to cover the crust.
